Warmer weather is finally here which means it’s grilling season. Foil pack dinners are always a good idea because they are quick, easy, and make a great healthy dinner with lots of flavor and little fuss.

This foil pack chicken recipe is so simple: you just mix all the ingredients in one bowl, pop everything into the foil, and grill until the chicken is cooked through.

The end result? The chicken is juicy, the veggies are tender, and the Cajun seasoning brings everything up a notch. (If you’re sensitive to a lot of spice, just cut down on the cayenne pepper and this dish will still be delicious.)

The spices of this foil pack chicken pairs perfectly with some hot cauliflower rice or some sweet potatoes. Next time you have a BBQ, try this as a dish—I promise, your friends will love it.

Ingredients

  • 2-3 boneless skinless chicken breasts cut into 1-inch pieces
  • 1 zucchini chopped
  • 2 cups broccoli florets
  • 1 bell pepper chopped
  • 1 small onion chopped
  • 2 cloves garlic minced
  • 2 Tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp cayenne pepper
  • 1 tsp paprika
  • 1 tsp ground oregano
  • 1 tsp black pepper
  • 1 tsp salt

Instructions

  1. Heat grill on medium-high heat. Or, if you’re using an oven, pre-heat to 450 degrees Fahrenheit.
  2. Cut 4 squares of foil, roughly 12”x12” in size. Set aside.
  3. Combine all your ingredients in a large bowl and mix thoroughly.
  4. Distribute the mixture evenly into the center of each of the 4 foil sheets.
  5. Fold the edges of the foil over to create 4 sealed packets.
  6. Place the foil packets on the grill and grill about 20 minutes (10 minutes per side). If you’re baking in the oven, place the packets on a baking sheet and bake for 20-25 minutes.
  7. Serve hot as is or with your favorite side.
