Zesty Beet, Carrot, and Apple Salad Recipe

Beets are an excellent source of folic acid and a very good source of fiber, manganese, and potassium. You can roast beets, but I love the flavor when they’re raw. They are sweet, but also have an earthy flavor that is especially delicious in salads or juices.

I love a good salad, and this beet salad is delicious and refreshing on its own, or you can have it as a side with some grilled chicken or fish. It’s also perfect in wraps. If you don’t usually eat your beets raw, I strongly urge you to give this a go. You won’t regret it. It is incredibly easy to put together, too.

Zesty Beet, Carrot, and Apple Salad

This beet salad is delicious and refreshing on its own, or you can have it as a side with some grilled chicken or fish.

Ingredients

  • 1 cup raw beet
  • 1 large carrot
  • 1/4 red onion
  • 1 Jazz apple or green apple, if you prefer
  • Handful fresh mint roughly chopped
  • Juice of 1/2 a lime
  • 1 tsp Dijon mustard
  • 1/4 cup Greek yogurt
  • 1/6 cup walnuts roughly chopped

Instructions

  1. Dice the beet, carrot, red onion, and apple into small pieces, or place them in a food processor and pulse until you achieve the consistency you prefer.
  2. Place them in a bowl and add the rest of the ingredients.
  3. Stir until well combined.
  4. Serve and have it on its own or as a side to the protein of your choice.
