Recipe: Fresh Chicken and Sausage Stir Fry

Fresh Chicken and Sausage Stir Fry

Ingredients

  • 2 pounds air-chilled chicken tenderloins
  • 1 pound sweet Italian sausage
  • 5 Brussels sprouts
  • 1 zucchini
  • 1 summer squash
  • 1 bunch asparagus
  • 1 yellow pepper
  • 1 orange pepper
  • 1/2 white onion
  • fresh basil
  • Salt pepper, cayenne powder
  • Olive oil

Instructions

  1. Shred Brussels sprouts.
  2. Dice onion.
  3. Cut the remainder of the vegetables into bite-size pieces.
  4. Set aside.
  5. Remove sausage from casing and hand separate into bite-size pieces.
  6. Sprinkle chicken and sausage with salt, pepper, and cayenne to taste.
  7. Pan fry sausage and chicken in olive oil on medium-high heat. Depending on meat thickness, fry for 4-5 minutes per side, forming a crispy exterior.
  8. Add all vegetables on top of the meat and cover the pan. Turn burner down to medium heat, and cook for 5 minutes.
  9. Uncover and stir thoroughly. Cook for 5 additional minutes.
  10. Remove from heat, drain oil, and serve.
