Spicy Kale and Cauliflower Rice

When I’m craving a big ol’ bowl of rice, this recipe comes to the rescue. Not only does it satisfy my craving for those pesky carbs, but it also packs a big dose of nutrition and killer flavors all into one dish.

Ingredients

  • 1 bunch of curly green kale washed, de-spined, and chopped
  • 1 large head of cauliflower washed and chopped
  • 2-3 tbsp sesame oil
  • 2-3 tbsp extra virgin olive oil
  • 3 cloves garlic minced
  • 1 handful cilantro roughly chopped
  • 1 large tomato chopped small dice
  • 4 tbsp apple cider vinegar
  • 2 tbsp coconut aminos
  • 1 tsp sea salt
  • 1/2 tsp black pepper
  • 5 scallions thinly sliced
  • 2 tbsp hot sauce that is compliant on your nutrition level

Instructions

  1. Using a food processor, make your cauliflower rice. I find that I have to do this in batches, because if you put too much cauliflower in at one time, not all of it gets “riced.” Set aside.
  2. Using a food processor, make your kale rice. Do this is batches as well. Set aside.
  3. Heat up your oil over medium low heat, and add the cauliflower and kale rice, along with all of the rest of the ingredients to the pot. Stir to combine.
  4. Turn the heat up to medium high, and saute for about 10-15 minutes, stirring every 3-5 minutes to make sure it doesn’t burn.
  5. Serve and enjoy!
