Chia Breakfast Pudding

  • 3 Tbsp chia seeds
  • 1/2 cup + 2 Tbsp non-dairy milk such as almond or coconut milk
  • 1/2 banana sliced
  • 1/4 cup blueberries
  • 2 Tbsp walnut pieces
  • 1/4 tsp ground cinnamon


  1. Mix the chia seeds and non-dairy milk in a small container or bowl, and set it in the fridge for several hours or overnight.
  2. After the mixture has soaked, remove it from the fridge. The soaked chia should have a gelatinous texture.
  3. Layer the chia pudding into a glass or bowl with the nuts, bananas, and blueberries.
  4. Sprinkle with ground cinnamon and serve.
