Sure, radicchio can be a little bitter when raw, but when cooked and combined with the sweetness and saltiness of balsamic vinegar and bacon, it’s fantastic.
Cook bacon in frying pan and take out before reaching desired done-ness.
Remove bacon from pan and dice into small pieces.
Add bacon and balsamic vinegar, stir, and remove from heat. Easy peasy, lemon squeezy!
